Stewed Apricots with Vanilla and Cardamom

stewed apricot overheadLe sigh. Is it just me? Doesn’t this just SOUND luscious and yummy? I intended this to be a breakfast post, but I think it would also make a lovely dessert, perhaps with some coconut milk?

So, fruit for breakfast is a good ayurvedic start to the day. Ojas and all. 

 

 

 

The Recipe:

  • 1 cup dry apricots *I soaked mine overnight, but you don’t have to.
  • 2 cups water
  • 3 chopped dates
  • 1 tablespoon vanilla extract
  • 1 teaspoon cardamom
  • A sprinkle of cinnamon

Add apricots, water, vanilla, dates and cardamom to a pan. Bring to a boil, then reduce heat and simmer for about 45 minutes or until the apricots are very soft. Sprinkle with cinnamon and enjoy

Apricots are great for all dosha types! Hooray!

**Kaphas should substitute 2 teaspoons of honey for the dates. Don’t cook the honey, just add it to your bowl before eating.
